RECIPE – Vegan protein cookies
I started making these cookies almost 4 years ago, while I was searching for super quick snack recipes – because time is so precious when you are a mom – so after I read all those recipes I browsed, I made my own recipe which is Quick, Delicious & Nutritious, good for all family members.
These protein cookies are a great choice for a snack between meals, I personally eat them before I hit the gym. You can serve them as breakfast next to a smoothie or a coconut yoghurt.
The protein powder teamed with the oats makes them really filling and satisfying. I promise it will take you just 20 minutes to finish: and that involves also the baking part 🙂
So here is the recipe for my famous protein cookies, also vegan. I topped mine with some coconut cream and some goji – Yum!
Ingredients
150 gr oats
8-10 dates
1 tsp raisins
1 tsp cinnamon
80 ml almond/coconut milk
1 scoop protein powder
Zest from 1 medium orange
Coconut cream for topping ( optional )
Goji ( optional )
Prepare like this:
1. Preheat the oven at 180C.
2.First you have to hydrate the dates in the almond milk for 1 h.
3.Then, put all the ingredients in a food processor and blend, blend, blend till it forms a dough.
4. Form the cookies the shape you want and put them on a lined baking tray, then put them in the oven for about 10 – 12 min.
5. Let them cool before you serve them. Enjoy!
